Mac & Cheese
Ingredients:
3 cups of cheese
1/2 cup Parmigiano-reggiano
8 tbsp butter
1/2 cup all-purpose flour
1/2 cup whole milk
1 cup heavy cream
1/2 lb cooked macaroni
1/2 cup bread crumbs
Directions:
Preheat your oven to 450F.
Over Medium heat melt butter and whisk in the flour. Keep stirring and cook until mixture is light brown.
Add the cheese, whole milk and cream. Stir until cheese has melted and mixture has thickened up. Make sure you continue to stir so cheese doesn’t burn to the bottom of the pan. Add the cooked Macaroni and stir until well combined.
Add mixture to an 8×8 baking dish. Top with bread crumbs and parmigiano-reggiano. Place dish in oven and cook until crust is golden brown approximately 20 minutes.
Now this dish can be eaten like this or you can be brave and deep fry it. Follow the previous directions, but once the macaroni and cheese is done put it in the fridge overnight to let it harden.
Preheat oil to 350. Set up your breading stage. Have one bowl with 1/2 cup flour, another with 2 whisked eggs, and the third bowl with 1/2 cup panko bread crumbs.
Cut your macaroni and cheese into sections. Take each section and cover it in flour then dip it into the egg followed by the bread crumbs. Place the macaroni and cheese into the oil and cook until brown about 4 minutes. Remove from the oil and pat dry.
