White Chocolate and Macadamia Nut Cookies


2/3 cup butter
1/2 cup white sugar
1/2 cup lightly packed brown sugar
1 egg
1 tsp pure vanilla extract
1 1/2 cup all-purpose flour
3/4 cup chopped macadamia nuts
6 oz white chocolate


Preheat oven to 325 F and lightly grease your cookie sheets.

In a large bowl beat together the first 5 ingredients. Next, on low speed gradually add flour until blended. With a wooden spoon stir in nuts and chocolate. Drop heaping tablespoons of dough and space 2 1/2 inches apart onto your greased cooking sheets.

Bake cookies in preheated oven for about 17 minutes or until golden brown. Allow to cool on baking sheets for at least 5 minutes then transfer to wire racks to finish cooling.
