Deep Fried Pickles

Ingredients:
1 beaten egg
1 cup milk
1 tbsp all-purpose flour
1tbsp Worcestershire sauce
3/4 tsp salt
3/4 tsp ground pepper
3 1/2 cups all-purpose flour
1 32 oz jar sliced dill pickles
vegetable oil for deep frying

Directions:

In a mixing bowl, mix together the first 4 ingredients. In another bowl stir together the next 3 ingredients.

Heat your oil to 350F. Dip each pickle into the milk mixture and then the flour mixture. Repeat for all the pickles.

Carefully place a few pickles in the hot oil and fry them until they turn golden brown and float up to the surface. Remove and drain on paper towels. Repeat cooking process until all pickles have been cooked.

Deep Fried Mac & Cheese

Mac & Cheese

Ingredients:

3 cups of cheese
1/2 cup Parmigiano-reggiano
8 tbsp butter
1/2 cup all-purpose flour
1/2 cup whole milk
1 cup heavy cream
1/2 lb cooked macaroni
1/2 cup bread crumbs

Directions:

Preheat your oven to 450F.
Over Medium heat melt butter and whisk in the flour. Keep stirring and cook until mixture is light brown.
Add the cheese, whole milk and cream. Stir until cheese has melted and mixture has thickened up. Make sure you continue to stir so cheese doesn’t burn to the bottom of the pan. Add the cooked Macaroni and stir until well combined.
Add mixture to an 8×8 baking dish. Top with bread crumbs and parmigiano-reggiano. Place dish in oven and cook until crust is golden brown approximately 20 minutes.

Now this dish can be eaten like this or you can be brave and deep fry it. Follow the previous directions, but once the macaroni and cheese is done put it in the fridge overnight to let it harden.

Preheat oil to 350. Set up your breading stage. Have one bowl with 1/2 cup flour, another with 2 whisked eggs, and the third bowl with 1/2 cup panko bread crumbs.

Cut your macaroni and cheese into sections. Take each section and cover it in flour then dip it into the egg followed by the bread crumbs. Place the macaroni and cheese into the oil and cook until brown about 4 minutes. Remove from the oil and pat dry.

Chocolate Filled Cream Puffs

1 cup water
6 tbsp butter
1 cup all purpose flour
1/4 tsp salt
4 eggs

Filling
1 cup heavy whipped cream
1/2 cup confectioners sugar
2 tbsp baking cocoa

Glaze
1 (1oz square) Unsweetened chocolate
1 tbsp butter
1/2 cup confectioners sugar
2 tbsp butter

In a pan over bring water and butter to boil over medium heat. Add flour and salt. Stir until there are no lumps and a smooth ball forms. Take saucepan off heat and let mixture sit for 5 minutes. Next add eggs one at a time. Beat until smooth.

Place foil over a baking sheet. Lightly grease the foil. Take the batter and drop it into  6 mounds. In a 400 F oven bake for 15 minutes. Reduce heat to 350 F and cook for an additional 30 minutes. Remove the puffs and immediately make a slit in each to let steam escape.

In a bowl beat the cream until peaks begin to form. Slowly add sugar and cocoa, beat mixture until almost stiff. Split puffs and remove the dough. Add your filling and replace the tops. Next melt chocolate and butter, add water and sugar. Drizzle mixture over puffs and chill.
