Meatball Sandwich

Serves:4

1 lb ground beef
3/4 cup Italian seasoned bread crumbs
2 cloves freshly minced garlic
2 tbsp chopped fresh parsley
2 tbsp parmesan cheese
salt and pepper to taste
1 egg
1 French baguette
1 tbsp olive oil
Garlic powder
14 oz jar spaghetti/tomato sauce
4 slices mozzarella or provolone cheese

Directions:

Preheat your oven to 350 degrees F.

In a large bowl mix together the hamburger meat, bread crumbs, garlic, parsley, parmesan, salt, pepper, and egg. Gently roll to form 12 meatballs and place in greased baking dish. Bake meatballs in preheated oven for 15-20 minutes or until cooked all the way through.

While meatballs are cooking cut baguette in half lengthwise. Remove some of the inner bread to make a mini well for the meatballs. Brush with olive oil and sprinkle garlic powder on bread. Place baguette in oven with the meatballs for the last 5 minutes of cooking or until bread is golden and toasty.

While bread is toasting warm up the spaghetti or tomato sauce over medium low heat. When meatballs are cooked gently place them in warmed spaghetti sauce. Spoon mixture on top of baguettes and top with cheese of your choice. Cut into individuals servings and enjoy.
