Deep Fried Macapuno (shredded coconut)

Ingredients:

1 cup rice flour
1 tsp baking soda
1/2 cup water, divided
1/4 cup macapuno

Glaze:
1/4 cub brown sugar
1 tbsp water

Directions:

In a bowl combine the rice flour, baking soda, and 1/4 of the water mix together. Add in the rest of the water slowly until a dough is formed. (You may not need to use all the water.)

Add the macapuno to the dough and mix. If the dough is to sticky add extra rice flour.

Using your hands break the dough into small pieces about a tablespoon in size. Roll the dough into little balls.

In a large frying pan heat the oil over medium high heat. Slowly add the dough balls and fry until golden brown. Drain the dough balls on paper towel.

In a saucepan over medium heat add the brown sugar and water and bring to a boil. Reduce the heat and continue stirring until all the sugar is dissolved.

While the dough balls are still warm place them in a bowl and pour the caramel over them. Serve Immediately.
