Deep Fried Egg (Scotch Egg)


1 1/4 pound ground herbed sausage
1 tsp dried crumbled sage
1/2 tsp dried thyme, crumbled
1/4 tsp cayenne
4 large hard boiled eggs
1/2 cup all-purpose flour
2 raw large eggs, slightly beaten
1 cup bread crumbs
vegetable oil for frying


In a mixing bowl combine the first 4 ingredients and divide into 4 equal portions. Make each portion a thin round. Place the hard boiled egg on top of the sausage round and wrap it tightly. Dredge the sausage covered egg in the flour, then dip it into the raw eggs letting any excess egg drip off. Next gently roll them in the bread crumbs coating the entire surface. Heat oil to 350F and gently place the eggs in the fryer. Cook for about 10 minutes then transfer them to paper towels.
